Classic Egusi Soup with Beef and Spinach


Ingredients:

  • 1 cup ground egusi seeds
  • 1 pound beef, cut into cubes
  • 1 bunch spinach, chopped
  • 1 onion, chopped
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 red bell pepper, chopped
  • 2 habanero peppers, chopped (optional)
  • 2 tablespoons palm oil or vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, brown the beef in the oil over medium heat.
  2. Add the chopped onions and red bell pepper and cook until softened.
  3. Stir in the tomato paste and habanero peppers (if using) and cook for 1 minute more.
  4. Add the beef broth and bring to a boil.
  5. Reduce heat and simmer for 30 minutes, or until the beef is tender.
  6. Gradually add the ground egusi seeds to the pot, stirring constantly to prevent lumps.
  7. Add the chopped spinach and cook until wilted.
  8. Season with salt and pepper to taste.
  9. Serve hot with fufu, pounded yam, or rice.
