Ingredients:
- 1 cup ground egusi seeds
- 1 pound beef, cut into cubes
- 1 bunch spinach, chopped
- 1 onion, chopped
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 red bell pepper, chopped
- 2 habanero peppers, chopped (optional)
- 2 tablespoons palm oil or vegetable oil
- Salt and pepper to taste
Instructions:
- In a large pot, brown the beef in the oil over medium heat.
- Add the chopped onions and red bell pepper and cook until softened.
- Stir in the tomato paste and habanero peppers (if using) and cook for 1 minute more.
- Add the beef broth and bring to a boil.
- Reduce heat and simmer for 30 minutes, or until the beef is tender.
- Gradually add the ground egusi seeds to the pot, stirring constantly to prevent lumps.
- Add the chopped spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot with fufu, pounded yam, or rice.
