  • Salt and pepper to taste

For the Enchilada Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups seafood broth (or chicken broth)
  • 1/2 cup sour cream
  • 1/4 cup shredded Monterey Jack cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

For the Mango Salsa:

  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and minced (optional)
  • 2 tablespoons lime juice

  4. Assemble the Enchiladas: Preheat oven to 350°F (175°C). In a bowl, combine the cooked seafood, heavy cream, cheese, cilantro, chili powder, salt, and pepper. Mix well. Spoon a small amount of enchilada sauce into the bottom of a 9x13 inch baking dish. Fill each tortilla with the seafood mixture and roll up. Place the enchiladas seam down in the baking dish. Pour the remaining enchilada sauce over the enchiladas and top with shredded cheese.
  5. Bake: Bake for 20-25 minutes, or until the cheese is melted and bubbly.
