Bobotie


Bobotie is a flavorful South African dish with a rich history. It's essentially a baked meatloaf with a unique twist – a topping of egg custard. The blend of spices like curry powder, turmeric, and bay leaves creates a warm and aromatic experience.   

Ingredients:

  • For the Bobotie:

    • 1 tablespoon olive oil   
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 1 pound ground beef (or lamb)
    • 1 tablespoon curry powder   
    • 1 teaspoon turmeric
    • 1/2 teaspoon ground coriander
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 cup beef broth
    • 1/2 cup dried apricots, chopped   
    • 1/4 cup chutney (apricot or peach)
    • 2 tablespoons white wine vinegar
    • 1/4 cup bread crumbs
    • 1 bay leaf
  • For the Custard Topping:

    • 2 eggs
    • 1 cup milk
    • 1/4 teaspoon salt

Instructions:

  1. Prepare the Meat: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute until fragrant.   

  2. Brown the Beef: Add the ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain any excess grease.   

  3. Spice it Up: Stir in the curry powder, turmeric, coriander, cumin, salt, and pepper. Cook for 1 minute more, stirring constantly.

  4. Simmer and Flavor: Pour in the beef broth, apricots, chutney, and vinegar. Bring to a simmer, then reduce heat to low, cover, and simmer for 15 minutes, or until the liquid has reduced.

  5. Assemble the Bobotie: Preheat your oven to 350°F (175°C). Remove the bay leaf from the meat mixture. Stir in the breadcrumbs. Transfer the mixture to a greased 8x8 inch baking dish.  

  6. Make the Custard: In a bowl, whisk together the eggs, milk, and salt. Pour this mixture evenly over the meat in the baking dish.

  7. Bake: Bake for 30-40 minutes, or until the custard is set and golden brown.

  8. Serve: Let the bobotie rest for 10 minutes before serving. Enjoy it with yellow rice and a side of chutney.

Tips & Variations:

  • Fruity Twist: Add a layer of sliced bananas or bay leaves on top of the meat mixture before adding the custard for a traditional touch.
  • Veggie Boost: Include chopped vegetables like carrots, peppers, or mushrooms for added texture and nutrition.
  • Spice It Up: Adjust the spices to your liking. Add more or less curry powder, or try a pinch of cayenne pepper for extra heat.
  • Make it Ahead: Bobotie can be assembled a day in advance and refrigerated. Bake it the next day when ready.
