Fufu: A Delicious West African Staple


Fufu is a popular West African dish made from boiled starchy root vegetables, typically cassava or plantains. It has a dough-like consistency and is often served as a side dish with soups and stews. In this blog post, I'll share a simple fufu recipe that you can try at home.   

Ingredients:

  • 2 pounds of cassava root (or plantains)
  • Water for boiling
  • Salt to taste   

Instructions:

  1. Peel the cassava root and cut it into small pieces. If using plantains, peel them and cut them into chunks.
  2. Place the cassava or plantains in a large pot and cover with water. Add a pinch of salt.
  3. Bring the pot to a boil, then reduce heat and simmer until the cassava or plantains are very soft and tender. This will take about 30-45 minutes.
  4. Drain the water from the pot and mash the cassava or plantains using a potato masher or a mortar and pestle.   
  5. Continue mashing until the fufu is smooth and elastic. Add a little bit of water if necessary to achieve the desired consistency.
  6. Form the fufu into balls or mounds and serve it warm with your favorite soup or stew.

Tips:

  • For a smoother fufu, you can use a food processor or blender to mash the cassava or plantains.   
  • If you don't have cassava root, you can use plantains, yams, or cocoyams to make fufu.   
  • Fufu is best served immediately after it is made. If you have leftovers, you can store them in the refrigerator for a day or two and reheat them in the microwave or on the stovetop.
