Fufu is a popular West African dish made from boiled starchy root vegetables, typically cassava or plantains.
Ingredients:
- 2 pounds of cassava root (or plantains)
- Water for boiling
- Salt to taste
Instructions:
- Peel the cassava root and cut it into small pieces. If using plantains, peel them and cut them into chunks.
- Place the cassava or plantains in a large pot and cover with water. Add a pinch of salt.
- Bring the pot to a boil, then reduce heat and simmer until the cassava or plantains are very soft and tender. This will take about 30-45 minutes.
- Drain the water from the pot and mash the cassava or plantains using a potato masher or a mortar and pestle.
- Continue mashing until the fufu is smooth and elastic. Add a little bit of water if necessary to achieve the desired consistency.
- Form the fufu into balls or mounds and serve it warm with your favorite soup or stew.
Tips:
- For a smoother fufu, you can use a food processor or blender to mash the cassava or plantains.
- If you don't have cassava root, you can use plantains, yams, or cocoyams to make fufu.
- Fufu is best served immediately after it is made. If you have leftovers, you can store them in the refrigerator for a day or two and reheat them in the microwave or on the stovetop.
Enjoy!
