Smoky Bacon Mac and Cheese: A Flavor Explosion in Every Bite

 


Mac and cheese. Comfort food royalty. But we're not talking about the boxed stuff here. We're going gourmet, infusing this classic with the irresistible smoky flavor of bacon. This recipe is creamy, cheesy, and utterly addictive. Get ready to impress your taste buds!

Yields: 6-8 servings Prep time: 20 minutes Cook time: 30 minutes

Ingredients:

  • For the Bacon:
    • 1 pound thick-cut bacon, chopped
  • For the Cheese Sauce:
    • 1/2 cup (1 stick) unsalted butter
    • 1/2 cup all-purpose flour
    • 4 cups whole milk
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon nutmeg
    • 1 pound sharp cheddar cheese, shredded
    • 8 ounces smoked gouda cheese, shredded
  • For the Macaroni:
    • 1 pound elbow macaroni
  • Optional Toppings:
    • Fresh parsley, chopped
    • Breadcrumbs

Instructions:

  1. Crisp the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy and golden brown. Remove the bacon with a slotted spoon and drain on paper towels, reserving the bacon fat. Don't discard the fat! We'll use some of it for the sauce.

  2. Cook the Macaroni: Cook the macaroni according to the package directions until al dente. Drain and set aside.

  3. Make the Cheese Sauce: In the same skillet (using the reserved bacon fat and adding butter if needed to make 1/2 cup), melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to make a roux. This will help thicken your sauce.

  4. Add the Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue whisking until the sauce thickens, about 5-7 minutes.

  5. Season and Cheese: Reduce the heat to low. Stir in the salt, pepper, and nutmeg. Add the shredded cheddar and smoked gouda cheese, a handful at a time, stirring until melted and smooth.

  6. Combine and Bake (Optional): Add the cooked macaroni to the cheese sauce and stir to coat evenly. At this point, you can serve the mac and cheese immediately. For a bubbly, golden-brown top, you can transfer the mixture to a greased 9x13 inch baking dish. Sprinkle with the cooked bacon (reserve a little for garnish) and breadcrumbs (if using). Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden brown and bubbly.

  7. Garnish and Serve: Garnish with the remaining crispy bacon and fresh parsley. Serve hot and enjoy!

  • Spice it Up: Add a pinch of cayenne pepper or a few dashes of hot sauce to the cheese sauce for a kick.
  • Different Cheese: Experiment with other cheeses like Gruyere, Monterey Jack, or even a little blue cheese for a unique flavor profile.
